Secret Nights In Grayslake: Bazaar Noir Speakeasy

September 13 @ 12:00 pm - 6:00 pm
An elegant art deco design highlighting our monthly Lake County Speakeasy pop-up event.

The Bazaar Noir Speakeasy Grayslake monthly pop-up transforms Beer Bazaar into a secretive 1920s cocktail den on second Sundays throughout the autumn and winter season! On Sunday, September 13, 2026, from 11:00 AM to 6:00 PM, our lights dim, the music shifts to vintage jazz, and access is granted exclusively to guests who know the secret password.

Bazaar Noir Speakeasy Grayslake Event Schedule & Secret Password

Once a month, Beer Bazaar temporarily sets aside its modern taproom environment to recreate the atmosphere of Prohibition-era Chicago and New York speakeasies.

The doors do not open for standard service during this window—entrance depends entirely on your knowledge of the monthly password.

Second Sunday Schedule

  • Sunday, September 13, 2026: Autumn speakeasy opener from 11:00 AM to 6:00 PM.

  • Sunday, October 11, 2026: October noir pop-up from 11:00 AM to 6:00 PM.

  • Sunday, November 8, 2026: November speakeasy session from 11:00 AM to 6:00 PM.

  • Sunday, December 13, 2026: Winter speakeasy finale from 11:00 AM to 6:00 PM.

Password Protocol

When you arrive at 107 Center Street, approach the counter and state the password clearly:

Secret Password: “We live in a twilight world and there are no friends at dusk.”

Say it clean, say it with confidence, and step inside to enjoy craft mixology in an intimate setting.

1920s Cocktail Science & Crystal-Clear Ice Mixology

Behind the speakeasy bar, mixologist Rachelle crafts vintage 1920s cocktails, Prohibition classics, and house-designed spirits.

Every cocktail served during Bazaar Noir Speakeasy Grayslake is built with high-proof spirits, house-infused syrups, fresh citrus juices, and aromatic botanicals.

The Science of Directional Freezing & Crystal Ice

Dilution rate and thermal mass dictate the quality of a spirit-forward cocktail. Rachelle pours speakeasy cocktails over hand-carved, single crystal-clear ice cubes.

Unlike home freezer ice—which freezes rapidly from all sides, trapping air bubbles and dissolved minerals into a cloudy core—our speakeasy ice undergoes directional freezing.

By forcing water to freeze from top to bottom inside insulated containers, microscopic air bubbles and minerals are pushed to the bottom and trimmed away.

This results in a 100% dense, crystal-clear ice block with the following benefits:

  • Slower Melt Rate: Dense, air-free ice melts significantly slower than cloudy ice, preventing premature cocktail dilution.

  • Temperature Maintenance: High thermal mass chills high-proof whiskey, gin, and rum to near-freezing temperatures instantly without watering down subtle aromatic notes.

  • Visual Clarity: Crystal-clear ice enhances light refraction inside the glass, showcasing the amber and ruby tones of aged spirits.

History of Prohibition Speakeasies & Noir Culture

The American speakeasy was born out of the 18th Amendment and the Volstead Act of 1919, which banned the manufacture, sale, and transportation of intoxicating liquors.

The Origin of the Term “Speakeasy”

The term originated in the late 19th century when unlicensed saloon keepers advised patrons to “speak easy” (whisper quietly) when ordering illegal spirits to avoid attracting municipal authorities.

Speakeasy Cocktails & Recipe Innovation

Because illicit Prohibition alcohol (often called “bath-tub gin” or moonshine) was harsh on the palate, 1920s bartenders pioneered creative mixology techniques.

They introduced fresh citrus, honey, pomegranate grenadine, and aromatic bitters to mask harsh spirit profiles. This era birthed timeless classic cocktails still celebrated today:

  • The Old Fashioned: Muddled sugar, bitters, aged bourbon or rye whiskey, and an orange peel.

  • The Bee’s Knees: Fresh lemon juice, raw wildflower honey syrup, and botanical dry gin.

  • The Last Word: Equal parts gin, green Chartreuse, maraschino liqueur, and fresh lime juice.

  • The Boulevardier: Bourbon whiskey, sweet vermouth, and bitter Campari over a dense ice cube.
